西厨厨师（学徒）

岗位职责

1. Works under close supervision in preparing ingredients for cooking

在上级的指导下一起准备配料以备烹饪

2. Measures and mixes ingredients according to standard receipts. Using a variety of kitchen utensils and equipments

使用不同的厨房器皿和设备，根据标准配方来混合配料

3. Sets up mise en place daily; cuts and prepares foodstuffs and ingredients for cooking

准备每日的准备工作，切割和准备食品配料已备烹饪

4. Listens to supervisor regarding new recipes. obtains cooked food or other items from freezer; heats pre-cooked food items as orders come in

听取主管的新配料单，现点现做

5. Portions off, trims and garnished food items on serving plates

份量及食品盛放美观

6. Adjusts thermostat controls to regulate temperature of oven, broilers, grills and roasters

调整自动调温器的控制和调整微波炉，烧烤器的温度

7. Cooks food following standard recipes and under the supervision of the Chef de Partie

按助理厨师长的标准配方要求

8. Ensure cleanliness and maintenance of equipment, work areas and cold rooms

确保食品风房，工作区域的设备的清洁和维护工作

9. Scrubs, scrapes and scours work tables, meat blocks and refrigerators; washes and dries utensils

擦洗，刮擦，磨亮工作台，刀，冰箱，清扫地板，清洗擦干皿

10. Carries dirty cooking utensils to stewarding and returns cleaned ones for use of respective kitchens

拿脏的器皿去管事部，把干净的拿回去，以备使用

11. Obtains and arranges utensils and supplies on the instructions of superiors. Lights stoves and ranges if necessary.

根据管理员的指令来准备器皿保障供给，例如如有需要，负责点燃燃气炉

12. Cleans and maintains work area, equipment, cold rooms and refrigerators.

清洁，维护工作区域，设备，冷房和冰箱

13. Transports foodstuffs by hand or by hand truck between kitchen and other points in the hotel, or between points in the kitchen.

在厨房和厨房之间转运食品必须用手推车

14. Transfers raw and cooked food from storeroom to preparation areas and distributes to kitchen concerned.

生食和被烹饪的烹饪食品，必须在仓库，准备区域运转和分发到相关厨房

15. Learns proper use of basic equipment, utensils and materials used in the respective kitchen.

学习正确使用基本设备，器皿以及在厨房使用的物品。

16. Performs other tasks that may be required by his superior.
